Initially titled “What if Ultra-Processed Foods Aren’t as Bad as You Think?”, the title was later changed ‍to “Why One Dietitian is Speaking Up for ‘Ultra-Processed’ Foods” following ‍criticism. The article featured dietitian Jessica Wilson, who argued that the negative perceptions ⁤surrounding‍ processed foods overlook food insecurity issues, particularly ⁣among lower-income ‌and minority populations.

Wilson’s critique was partly directed at ⁤Dr. Chris van‍ Tulleken’s book, which highlighted the downsides of ultra-processed foods, asserting that it unfairly shamed those who rely on such diets. In an attempt to prove her point, Wilson conducted an experiment where she consumed 80% of her calories from highly processed foods, claiming she experienced increased energy and reduced anxiety.

Time referenced a 2023 study indicating that a healthy diet could include a⁤ significant amount‌ of ultra-processed foods while maintaining diet quality. However, concerns arise given that one researcher involved has⁢ ties to the Soy Nutrition‌ Institute, funded by the soybean industry, which has a vested interest in‌ promoting such findings. The article⁣ touches on ⁢the broader⁢ issue⁢ of how processed foods, largely comprised of soy, wheat, and corn, dominate American diets, raising long-term health concerns tied to obesity and chronic disease. Critics argue that major media outlets perpetuate a misleading narrative akin to past tobacco industry practices, framing unhealthy habits as acceptable or even healthy.

Time Magazine dismissed the danger of hyper-processed foods last week by relying on research linked in part to the soybean industry.

On Tuesday, the paper published an article asking readers to ponder, “What if Ultra-Processed Foods Aren’t as Bad as You Think?” The magazine later changed the title of the piece to “Why One Dietitian is Speaking Up for ‘Ultra-Processed’ Foods” after the original headline provoked controversy online.

TIME before and after Trump made America’s food quality crisis a centerpiece of his campaign. pic.twitter.com/n5yOmzQ8Tq

— 🇺🇸Travis🇺🇸 (@Travis_4_Trump) August 28, 2024

The magazine profiled a woke dietician named Jessica Wilson, who was “irked” by Dr. Chris van Tulleken’s book on processed food, Ultra-Processed People: The Science Behind Food That Isn’t Food. According to Time, Wilson complained the book was “over-sensationalized and that the news coverage of it shamed people who regularly eat processed foods — in other words, the vast majority of Americans, particularly the millions who are food insecure or have limited access to fresh food; they also tend to be lower income and people of color.”

“Wilson felt the buzz ignored this ‘food apartheid,’ as well as the massive diversity of foods that can be considered ultra-processed, a category that includes everything from vegan meat replacements and nondairy milks to potato chips and candy,” Time reported. “‘How can this entire category of foods be something we’re supposed to avoid?’ Wilson wondered.”

Wilson went on to conduct an experiment wherein she ate 80 percent of her daily calories from “highly processed foods,” which included swaps of “morning eggs for soy chorizo” among other changes.

“A weird thing happened,” Time reported. “Wilson found that she had more energy and less anxiety.”

Other than the countless variables cast aside in the study of one, the feature went on to highlight research from 2023 which suggested a healthy diet could prominently feature foods which are highly processed.

“Healthy dietary patterns can include most of their energy from [ultra-processed food], still receive a high diet quality score, and contain adequate amounts of most macro- and micronutrients,” researchers concluded.

Author affiliations show at least one researcher is linked directly to the Soy Nutrition Institute Global, an industry research group funded by the United Soybean Board.

Soybeans are among the “Big Three” ingredients that make up most hyper-processed foods, alongside wheat and corn. On Tuesday, they released an article prompting readers to consider, “What if Ultra-Processed Foods Aren’t as Bad as You Think?” After facing backlash online over the original title, the magazine revised it to “Why One Dietitian is Speaking Up for ‘Ultra-Processed’ Foods.”

The article featured dietitian Jessica Wilson, who expressed her annoyance at Dr. Chris van Tulleken’s book on processed foods titled *Ultra-Processed People: The Science Behind Food That Isn’t Food*. According to Time, Wilson criticized the book for being overly sensationalized and claimed that its media coverage shamed those who consume processed foods—essentially targeting a large portion of Americans, especially those who are food insecure or have limited access to fresh produce; this demographic often includes lower-income individuals and people of color.

Wilson argued that this discourse overlooked issues like “food apartheid” and failed to recognize the wide variety of items classified as ultra-processed—from vegan meat substitutes and non-dairy milks to snacks like chips and candy. She questioned how such a broad category could be deemed entirely unhealthy.

To further her point, Wilson conducted an experiment where she derived 80 percent of her daily caloric intake from highly processed foods—including substituting soy chorizo for morning eggs. Surprisingly, she reported feeling more energetic and less anxious during this period.

Despite ignoring numerous variables in her personal study, Time highlighted 2023 research suggesting that a healthy diet can include significant amounts of ultra-processed food while still achieving high dietary quality scores with sufficient macro- and micronutrients. Notably, one researcher involved in this study has ties to the Soy Nutrition Institute Global—a group funded by the United Soybean Board.

Soybeans are among three primary ingredients (alongside wheat and corn) prevalent in most hyper-processed foods; these products constitute about 60 percent of American calorie intake. This connection gives the soybean industry clear motives for downplaying concerns regarding industrially produced food items despite established links between such diets and obesity-related health issues.

Meanwhile, other major publications have adopted far-left narratives promoting “health at every size,” perpetuating corporate-sponsored claims equating obesity with health—similar tactics used by Big Tobacco when marketing cigarettes through endorsements from doctors decades ago. In fact, major tobacco companies acquired some leading food corporations in the 1980s as they sought ways to make their products increasingly addictive.

In January last year, Time also published an interview with a fitness historian titled “The White Supremacist Origins of Exercise,” exploring how U.S. exercise trends evolved from reinforcing white supremacy to celebrating figures like Richard Simmons—a narrative suggesting that health initiatives serve as tools for white nationalism within left-wing social justice frameworks.

Tristan Justice serves as The Federalist’s western correspondent and authors *Social Justice Redux*, focusing on culture along with health topics.
